CADILLAC CONCIERGE: You won't find lamb cheeks on the menu at Meddlesome Moth. Not yet, anyway. "Things like pig entrails wrapped in pig ear and snout just don't work in Dallas," says Shannon Wynne, proprietor of the new venue in the Design District. "There are all kinds of great things and we'll get into that later, but we have to soften the palate." |

Wynne is wisely breaking us into the gastro pub genre gently. Noon fare features seared tuna salad and light sandwiches apropos to the ladies who lunch. Dinner is heartier, rife with steaming pot pies, shrimp with jalapeno grits, pork belly and bone marrow to compliment the artisanal beer menu that is potentially the Moth's main attraction. The 40 beers and ales on tap and more than 80 bottled brews are the beloved provenance of Wynne's business partner Keith Schlabs, who scoured the world for talented brewers who weren't necessarily represented in Dallas.
